Green Goddess Salad

It officially feels like spring in the Pacific NW. The sun has introduced itself and we’ve even seen some flower buds make an appearance. It sure feels refreshing! To celebrate Hannah Morishita cooked up the TikTok famous Green Goddess Salad. This recipe came from one of our favorites, @bakedbymelissa. Enjoy!

Salad Ingredients:

  • 1 small head green cabbage

  • 3-4 baby cucumbers (or one large)

  • ¼ cup chives

  • 1 bundle green onion/scallions

 Salad Dressing:

  • 1 cup basil leaves

  • 1 cup spinach leaves

  • 2 cloves garlic

  • 1 small shallot

  • Juice of 2 lemons

  • ¼ cup olive oil

  • ¼ cup nuts of your choice (recommend cashews or walnuts)

  • 1/3 cup nutritional yeast

  • 1 tsp. salt

  • 1 Tbsp. rice vinegar

  • Any extra chives optional

 Instructions:

  • Wash and then chop all salad ingredients as small as you’d like and place in large bowl.

  • Add all liquid salad dressing ingredients to a blender, then add remaining dressing ingredients to same blender. Blend until smooth.

  • Pour dressing over salad mix and enjoy with your favorite chips or crackers.

Salad stays fresh in fridge for up to a week.
